LU•UM was born from a lifelong dream—to create a space where people feel at home, a place to gather, share, and savor meaningful experiences. Since opening in July, we have been dedicated to blending warm hospitality with beautifully prepared food, where every dish is thoughtfully crafted and presented with care.

Jose Luis Estevan

The Maestro of Gastronomy and Soul of the Home

His initial training was thanks to Chef Salvador Gallego at El Cenador de Salvador Relais & Châteaux (1 Michelin star), where he was head chef, later spending time at restaurants such as Zalacaín, Martín Berasategui, and La Broche. He was the Executive Chef at Millesime World; responsible for the creation of the Millesime Culinary Club in Mexico, Chile, and Panama, the pop-up Locura Millesime in Tulum, the Xperience catering service, the Mill Chef at Home platform, in addition to overseeing the kitchens of the Millesime Spain and Mexico events. He was Head Chef and Executive Chef at the Hotel Puerta de América Silken (5 stars) in Madrid and its renowned restaurant Lágrimas Negras. An expert in the design, setup, and launch of new establishments, such as Fonda de la Confianza and La Bien Aparecida in Madrid. He is the culinary advisor to the restaurant El Corral de la Morería, the first and only restaurant in the world with a Michelin-starred show.

Lead Mixologist

Marta brings over two decades of passion and expertise to LU•UM as our Lead Mixologist. Her love for hospitality began at just 13, inspired by weekends spent at a friend’s father’s bar, where the lively atmosphere and creativity behind the counter sparked a lifelong dream.
At 16, Marta immersed herself in vocational training in hospitality and catering, later discovering her true calling in the art of mixology. For her, crafting cocktails isn’t just a skill—it’s a way to tell a story, spark connections, and create unforgettable moments. At LU•UM, Marta’s magical cocktails are at the heart of the experience, blending innovation with warmth to make every guest feel at home. Grill Master

At LU•UM, German brings over 20 years of culinary expertise to the grill, infusing each dish with a passion for grilling that began in his homeland of Argentina. From a young age, he was inspired by the kitchen, spending treasured moments cooking alongside his father and grandmother.
German’s formal culinary training in Argentina and his diverse international experiences in Spain have shaped his exceptional grilling techniques, which he’s perfected over the years. For the last five years, he’s been delighting diners in Ibiza, offering a unique blend of Argentine flavors and global influences. Step into LU•UM and experience the art of grilling through German’s expert touch, where every dish tells a story of passion, tradition, and exceptional flavor.

Operations Leader & Wine Expert

I was born in Buenos Aires, Argentina, and have lived in Spain since 2001. I started as a pizza maker in my family’s business while studying. As an aeronautical technician and international relations graduate, I spent 15 years in educational cooperation and development across Ibero-America. In 2011, a break in Ibiza led me to discover my passion for gastronomy and wine, shaping a 14-year career in hospitality. During the pandemic, I spent a year in Bali, reflecting on our environmental impact. Back in Ibiza, I founded Another Round in 2022, a circular economy project repurposing Horeca sector waste. Today, I manage LUUM Ibiza, a wood-fired restaurant blending tradition and modernity with a sustainable culinary approach.

Anita

Gastronomic Enthusiast

Born in Madrid but with an island spirit, I came to Ibiza 17 years ago. I am passionate about the sea, beaches and nature, one of my favourite activities is diving. I am a student of design, service quality and restaurant management. I have been lucky enough to work with great professionals who have helped me to forge my career as a hospitality worker. I believe that everything is more beautiful with a smile.
